[Louise] In this bowl, I’ve put a cup and a half of plain flour, a teaspoon and a half of baking powder and half a spoon of salt. And that’s all mixed and I’ll put it to one side. But just now, I’m going to put half a cup of butter, relatively warm, kind of room temperature, in here. And I’m just going to put it into the mixer for a minute or two just to make it really soft.
[Louise] That looks okay and I’m now going to put a cup of sugar, just caster sugar, into it.
[Louise] I’m going to put the eggs in but just one and then mix it and then the other just so that it’s properly mixed.
[Gregor] Louise puts a third of the flour in, half of the buttermilk, another third of the flour, the rest of the buttermilk, and, finally, the remainder of the flour.
[Louise] Well I have one special ingredient if you’ll wait for a minute…
[Louise] So I’m going to put two big spoons in here, I’m just going to mix it just so that everything comes together again.
[Gregor] Louise divides the mixture between three cake dishes that are 10 inches across and puts them into the over for about a quarter of an hour at 175 Celsius.
Gregor] For the icing, she mixes three egg whites and a full cup of fine sugar. She puts that then in a bowl on top of a pan which is boiling gently. She has beaten the eggs well for two to three minutes until the sugar has melted.
[Louise] Now, so I’m just going to put the butter in little by little.
[Gregor] How much butter is there?
[Louise] A cup and a half of unsalted butter at room temperature.
[Louise] I’m going to put two teaspoons of rum in now. Maybe two and a half.
[Louise] I’m just going to mix this and then we’re ready to put everything together.
[Louise] In this bowl there’s a jar of crushed pineapple which has been boiled with a cup of caster sugar and two teaspoons of cornflour. I’m going to start. I’m going to put a bit of buttercream around the outside of this sponge and now I’m going to put half of the pineapple and a little toasted coconut on it.
[Louise] I’m just going to pour the buttercream on the top.
[Gregor] Louise decorates the cake with dry coconut flakes and puts a cherry in the middle.
[Louise] Oh there’s no doubt that there’s rum in here though.
